    Title: 咖啡館綠色環境氛圍設計指標之研究
    A Study on the Indicators for Green Environment Atmosphere of Coffee Shop

    Abstract: 近年來,咖啡館充斥整個大街小巷,到咖啡館喝咖啡已成為民眾休閒生活中不可或缺的一環,其中享受當下的環境氛圍,亦為相當重要之目的。故將咖啡館結合綠色環境氛圍,提供消費者感受到不一樣的氛圍體驗。
    本研究設計指標方式採用德爾菲專家問卷法,針對餐飲與環境管理之學者、咖啡館業者以及政府單位等具專業知識的專家學者進行三回合問卷發放,共計15位,並藉由其意見反覆回饋之特性使得結果收斂,最後利用穩定度分析及第三回合問卷之各面向平均數作為篩選標準,最終萃取出適用於咖啡館綠色環境氛圍設計指標共40項,本研究的結果如下:
    一、聽覺氛圍面向而言,平均值最高的指標為「咖啡館的員工招呼方式與對談,以柔和方式為
    主」,平均值4.6分。
    二、視覺氛圍面向的重要性得分最高的指標為「綠咖啡館桌椅適合以木質材質為主」,平均值4.9
    分。
    三、觸覺氛圍面向的重要性得分最高的指標為「綠咖啡館適合設有窗戶使空氣流通」,平均值4.8
    分。
    四、嗅覺氛圍面向而言,重要性得分最高的指標為「綠咖啡館內適合有咖啡香氣」,平均值4.9
    分。
    五、味覺氛圍面向而言,重要性得分最高的指標為「綠咖啡館內食物適合以新鮮為主」,平均值
    4.9分。
    根據上述結果建議相關業者可以採用本研究所設計出的40項相關指標,應用於咖啡館,給予顧客不一樣的環境氛圍感受。
    In recent years, cafe shop can be found filling every place where the public going to the coffee shop may become an indispensable part of people's leisure life. To enjoy the pleasant atmosphere has been deemed to be a very important consideration. cafe shop combines with environmental atmosphere has to take into account the ability to provide consumers to feel the good atmosphere in receiving the exotic style, which may affect customers' pleasure and enjoyment, and the cafe shop overall images and existence.
    Hence, the purpose of this study is to explore the indicators that can be used for evaluating coffee shop green environmental atmosphere, and the Delphi Method is employed to collect experts opinions. Finally, from 15 experts of 40 candidate indicators are selected after three rounds of the Delphi Method. The major findings are highlighted below:
    1. Auditory atmosphere, the highest average index for " Green cafe shop staff greet and talk in a gentle manner" the average 4.6 points.
    2. The importance of visual environment for the highest score index for "Green cafe shop tables and chairs suitable for wood materials" the averages 4.9 points.
    3.The importance of tactile atmosphere for the highest score indicators to "Green coffee shop for the window makes the air circulation", the average 4.8 points.
    4. The importance of gustatory atmosphere for the highest score indicators to "Green coffee shop suit to have coffee aroma"the average 4.9 points.
    5. The importance of gustatory atmosphere for the highest score indicators to "Green cafe shop for fresh food-based"the average 4.9 points.
    According to the above results suggest that relevant manufacturers can use this research to design 40 related indicators, used in cafe shop, giving customers not the same atmosphere.
