    題名: 國產仙草與進口仙草之凝膠性及加工特性之比較
    The compared of processing property and gellingproperty of Taiwaness and import Hsian-Tsao(Mesona procubens Hemsl)

    摘要: 本實驗以0.3%碳酸鈉萃取溶液各別萃取六種仙草乾3小時,並添加4%玉米澱粉製成仙草凍。測定仙草萃取液之可溶性無氮物物(NFE)、多醣體區分之Fraction C含量、總醣含量(TCC)、醣醛酸(UA)含量及仙草凍之質地,以及六種仙草成分及凝膠性之差異。結果發現,桃園1號、越南、大陸、印尼、農試1號及花蓮仙草之NFE分別為36.12 %、46.42 %、46.06 %、44.59 %、54.32 %、49.04 %,Fraction C分別為1.87 mg/g、3.84 mg/g、3.65 mg/g、4.33 mg/g、8.45 mg/g、6.25 mg/g,TCC含量分別是12.71 %、14.55 %、13.58 %、19.47 %、15.09 %、15.07 %,UA含量分別為28.48 %、64.79 %、28.45 %、84.73 %、78.50 %、66.15 %,質地分析之仙草凍硬度分別為0.80 g、579.90 g、0.10 g、951.50 g、851.70 g、735.90 g。國產仙草以農試1號及花蓮仙草凝膠性遠大於桃園1號,進口仙草以印尼仙草凝膠性最好,國產與進口仙草相較下,又以進口之印尼仙草凝膠性較佳。
    Six different source of Hsian-Tsao (Mesona procubens Hemsl) was extracted by 0.3 % sodium carbonate solution for 3 hours, and then 4 % corn starch was added to turn into Hsian-Tsao gel. Nitrogen free extract(NFE), fraction C, total carbohydrates content(UCC), uronic acid(UA) were determined for each Hsian-Tsao, and the Hsian-Tsao gel hardness was tested. It was found the NFE of Taoyuan NO.1, Vietnam, China, Indonesia, Agriculture research NO.1 and Hualien were 36.12 %, 46.42 %, 46.06 %, 44.59 %, 54.32 % and 49.04 %; fraction C were 1.87 mg/g, 3.84 mg/g, 3.65 mg/g, 4.33 mg/g, 8.45 mg/g, 6.25 mg/g; total carbohydrates were 12.71 %, 14.55 %, 13.58 %, 19.47 %, 15.09 %, 15.07 %; uronic acid were 28.48 %, 64.79 %, 28.45 %, 84.73 %, 78.50 %, 66.15 %. The hardness of six Hsian-Tsao gel were 0.80 g, 579.90 g, 0.10 g, 951.50 g, 851.70 g, 735.90 g. The result found the gel strength of Agriculture research NO.1 and Hualien are higher than Taoyuan NO.1 among Taiwaness Hsian-Tsao. The gel strenth of Indonesia Hsian-Tsao is higher than other import Hsian-Tsao. In conclude, Indonesia Hsian-Tsao gel strength is the highest for all the six source of Hsian-Tsao.
