    摘要: 學校的飲食營養教育課程和飲食供應環境對學生飲食行為養成非常重要,根據調查顯示,現今大學學校學生營養認知不足,不重視健康;大學生大部分為外食,且飲食營養品質不佳,但學校對校內飲食供應並沒有完善的管理及監督,多數學校也沒有飲食營養相關課程。對於大學學校之問題,提出二方面建議:藉加強飲食營養相關通識課程、建立學校飲食營養資訊網絡、辦理飲食營養促進計劃及評估,來改進大學生飲食營養認知及態度,提昇健康飲食行為動機;第二方面致力改進大專院校校內外餐飲供應品質,促使大學生落實健康飲食行為。其作法主要包括:訂定大專院校餐飲供應原則、強化學校營養師功能、建立完善的學校餐飲外包制度規範及管理機制,及輔導學校附近餐廳改善餐飲營養衛生。
    Both nutrition education and the dietary environment have great influence on diet habit development of adolescents. Recent surveys revealed that the college students did not have sufficient nutrition knowledge and neglect the importance of health. Most college students ate outside home and their dietary nutrition quality was undesirable. College authority did not have proper management and supervising system for the nutritional quality of foods sold on campus. Meanwhile, few colleges offered nutrition-related general courses. After reviewing the current situation, suggestions were given covering two aspects. First, enhance college students' motivation for healthy eating by increasing knowledge, awareness and value about healthy eating through designing nutrition-related general education courses, computer-assisted learning system and campus nutrition promotion program/activities. Second, to improve the nutrition quality of meals provided on-campus by setting general nutrition principles/guidelines of meals, empowering the role of college dietitian, establishing contracting and management system of the on-campus restaurants, assisting oft-campus restaurants to improve their food's nutrition quality and hygiene.
