隨著餐飲業壯大發展,餐飲業成為社會發展及城市發展民生必需產業,餐飲業發展好壞可以反映城市經濟發展的程度及人民生活水準,餐飲業不僅是滿足人們生理需求的基礎,也是當今社會滿足人們對美食及心理的追求必要產業。因此,如何提昇連鎖餐飲門店績效管理,如財務面、顧客面,内部流程管理,及内部學習成長,有效降低人事及作業成本,將資源作最佳利用,已成為國際餐飲服務連鎖企業當前必須關注的課題。
本研究擬定下列具體之研究目的:
整合平衡計分卡、資料包絡分析,為國際餐飲服務連鎖企業績效管理發展一個標竿管理架構並進行實證運用。
應用平衡積分卡及資料包絡分析法探討連鎖餐飲企業中每家門店外部因素對内部績效管理的重要性及提升國際餐飲服務連鎖企業之績效管理。
With the growth and development of the catering industry, the catering indus-try has become a necessary industry for social development and urban development. The development of the catering industry can reflect the degree of urban economic development and people's living standards. The catering industry is not only the basis for meeting people's physiological needs, but also in today's society A neces-sary industry to satisfy people's pursuit of food and psychology. Therefore, how to improve the performance management of chain catering stores, such as financial, customer, internal process management, and internal learning and growth, effec-tively reduce personnel and operating costs, and make optimal use of resources. It has become an international catering service chain enterprise must now pay atten-tion to the subject.
The following specific research objectives are proposed for this study:
Integrate the balanced scorecard and data envelopment analysis to develop a benchmarking management framework for the performance management of inter-national catering service chain enterprises and carry out empirical application.
Apply balanced scorecard and data envelopment analysis method to explore the importance of external factors of each store in chain catering enterprises to in-ternal performance management and improve the performance management of in-ternational catering service chain enterprises.
