    Abstract: 生物感測器為結合生物性材料與換能器所組成的分析工具。在各類型的生物感測 器中,利用酵素與分析物之間的辨識作用的酵素電極研究最多。本文介紹目前酵素電極的發展和於食品工業的應用。包括用於食品成分分析的葡萄糖感測器、蔗糖感測器、麩胺酸感測器、酒精感測器、阿斯巴甜感測器及品質監控的鮮度感測器及農藥感測器。
    Biosensors are analytical devices involving the incorporation of a biological component and a transducer. Of all type of biosensors, enzyme electrodes based on the molecular analyte recognition and conversion have been most intensively studied. This article provides an overview of some present aspects of enzyme electrode researches and their applications in the food industries. These electrodes are utilized for the analysis of food components including carbohydrate, acid, alcohol, and aspartame. They are also applied for food quality and safety control, for example, evaluation of fish (meat) freshness and determination of pesticide residues.
